My kids new favorite dinner are these veggie packed homemade chicken nuggets with ground chicken. They are super easy to make and healthier than the frozen nuggets you buy at the store.

Who does’t love a good chicken nugget? My kids are huge chicken nugget fans. These homemade chicken nuggets with veggies will fool even your picky eaters.

This recipe makes me feel so much better than driving through my nearest Chick-Fil-A (although we still do that sometimes). You can skip the fast food line my friends and make these instead.

These nuggets are perfect for a quick easy dinner. I make double and freeze half for when I don’t have time to make anything. You can even throw them into your kids lunch box for a delicious, healthy lunch. I love to serve mine in the omie box because it keeps things hot.

Veggie chicken nuggets are quick and easy to make. Here is how to make them.

Ingredients For Homemade Chicken Nuggets With Ground Chicken:

Ground Chicken: I like to use organic ground chicken.

Carrots: Make sure you finely shred the carrots.

Zucchini: Make sure you finely shred the zucchini.

Spinach: Make sure you finely chop the spinach. I like to use fresh spinach. You can also use frozen spinach and drain it thoroughly.

Kosher Salt

Italian Seasoning: Adds a delicious flavor. You can leave it out if your kids won’t like it.

Parmesan Cheese: Use finely ground parmesan cheese.

Garlic Powder: You can also use garlic salt or onion powder.

Panko Bread Crumbs: To make these gluten free use a gluten free panko bread crumb.

Avocado Oil: I like to use avocado oil because it is a healthier oil. You can also use olive oil.

How To Make Homemade Chicken Nuggets:

Preheat the oven to 400 degrees F.

Combine the ground chicken, carrots, zucchini, spinach, salt, seasoning, parmesan and garlic powder in a large mixing bowl. Mix the chicken mixture with your hands until well combined.

Take a golf ball sized amount of meat mixture and form into a small oval shaped nugget and set aside. Continue with the rest of the meat mixture.

Pour the bread crumbs into a shallow bowl. Place the nuggets into the breadcrumb mixture to coat on both sides.

Preheat a large non-stick skillet over medium heat and add the oil. Carefully place the breaded nuggets into the pan and cook for 2-3 minutes per side until slightly golden brown.

Remove the nuggets and place on a foil lined baking sheet. Finish cooking the nuggets in the oven for 5-10 minutes or until cooked through. Remove from the oven and season with salt and pepper.

Serve the baked chicken nuggets with your favorite dipping sauce or try out my copy-cat Chick-Fil-A sauce.

Can I freeze the Chicken Nuggets:

You can definitely freeze these chicken nuggets. I prefer cooking them and then freeze them.

To reheat take the frozen chicken nuggets out of the freezer bag and cook in the air fryer for 10 minutes, oven at 375 F for 15 minutes or in the microwave for 1-2 minutes.

Air Fryer Chicken Nugget Recipe:

I love reheating the chicken nuggets in the air fryer.

You can also skip the pan searing and spray the chicken nuggets with cooking spray and cook them in the air fryer for about 10 minutes or until cooked through.

  • 1 Pound Ground Chicken
  • 1/4 Cup Carrots, Finely Shredded
  • 1/2 Cup Zucchini, Finely Shredded

  • 3 Tablespoons Avocado Oil

Copy Cat Chick Fil A Sauce

Copycat Chick-Fil-A sauce goes good on just about anything! Great for dipping nuggets or fries or a sauce for burgers.

Ingredients

  • ½ Cup Mayonnaise
  • 1 Tablespoon BBQ Sauce (I like Sweet Baby Ray’s for this recipe)
  • 1 Teaspoon Yellow Mustard
  • 1 Teaspoon Honey


Instructions

  1. Combine all the ingredients in a small bowl.
  2. Serve with chicken nuggets or fries.

Notes

You can store in plastic containers or a mason jar fitted with an ergo spout attachment for up to one week.
