If you are anything like me sometimes your schedule doesn’t allow you to sit down and eat dinner together as a family. These time saving dinner freezer meals are quick to make and great to have on hand for when you really need to save dinner time! On the go freezer dinners will help you have a healthy meal for your family.

These weeknight dinner freezer meal recipes take under 30 minutes to make and have minimal ingredients so you most likely won’t have to run to the grocery store 10 times!

Whether you have 5 minutes or 10 minutes to get dinner on the table try these quick and easy hot dinner on the go ideas. Simply throw them in the microwave and eat them in the car or at soccer practice. 

BBQ Chicken Taquitos

Taquitos are one of my favorite on the go freezer dinners.  Fill them with a variety of fillings and change up the recipe to your liking. 

BBQ chicken taquitos
Yield: Makes 10

BBQ Chicken Bacon Taquitos

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Freezer Taquitos are quick and delicious for an on the go dinner.

Ingredients

  • 2 Cups Rotisserie Chicken, Shredded
  • 1/2 Cup Bacon, Cooked and Roughly Chopped
  • 2 Cups Cheddar Cheese, Shredded
  • 1/4 Cup BBQ Sauce (you can add more if you like a stronger flavor)
  • 10 Flour Tortillas (you can also use corn)
  • Cooking Spray
  • Kosher Salt


Instructions

  1. Combine rotisserie chicken, bacon, cheddar cheese and bbq sauce in a bowl.
  2. Fill a tortilla with a couple tablespoons of the chicken mixture and roll the tortilla to form a taquito.
  3. Continue to fill the remaining tortillas.
  4. Place the taquitos in a resealable ziploc bag or plastic ziploc and store in the freezer.
  5. When ready to serve place the taquitos on a foil lined baking sheet and spray with cooking spray. Sprinkle the tops with kosher salt and bake at 400 for 20 minutes.
Meatballs

These meatballs are a staple in our house to have on hand in the freezer.  You can switch them up and serve them on spaghetti, in subs, over rice or just by themselves. I like to keep these in meal containers that can go straight into the microwave so when I am in a rush I can simply just throw a serving in the microwave and take it with me to eat in the car or at a kids game. 

Turkey Meatballs
Yield: 24 Meatballs

Freezer Turkey Meatballs

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 1 Pound Ground Turkey
  • 1/4 Cup Zucchini, Finely Shredded
  • 1/4 Cup Carrots, Finely Shredded
  • 1 Tablespoon Montreal Steak Seasoning


Instructions

    1. In a large mixing bowl, combine ground turkey, zucchini, carrots and steak seasoning.
    2. With clean hands, scoop out a heaping tablespoon of meat mixture to form mini meatballs. Place on a foil-lined baking sheet.
    3. Cook the meatballs in the oven for 12-15 minutes. Let meatballs cool completely then place in a Ziploc gallon-size freezer bag. Freeze.

Notes

Ways to serve:

-In a sandwich with meatballs, cream cheese and pepper jelly

-Toss with tomato sauce

-Toss with BBQ sauce

-Toss with pepper jelly

-Toss with teriyaki sauce

To Reheat:

Microwave for 1-2 minutes.

Place the meatballs in an oven proof baking dish that fits in the Instant Pot (I use a cake pan). Place 1 cup water in the bottom of the Instant Pot and add the trivet. Place the meatballs on top of the trivet and seal. Cook on steam for 15 minutes.

Hand Held Pizzas

Change up the fillings to whatever your family enjoys.  I like to leave out the sauce and use it for dipping instead for less mess.  That way you can leave it out entirely if you are eating these in the car. No one wants tomato sauce everywhere when eating on the go!

Pizza hand pies
Yield: Makes 6

Freezer Pizza Hand Pies

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Make these pizza hand pies for a quick on the go dinner that you can pull out of the freezer, microwave and have an on the go meal for when you really don't have time to cook.

Ingredients

  • 2 Tablespoons All Purpose Flour
  • 1 Pre-made Pizza Dough (Trader Joe's)

Toppings Of Choice

  • Mixed Italian Cheese Blend
  • Vegetables
  • Pepperoni
  • Pineapple
  • Cooking Spray
  • Kosher Salt

For Dipping:

  • Tomato Sauce


Instructions

  1. Preheat the oven to 400 degrees F.
  2. Lightly dust a clean work surface with flour. Evenly cut the pizza dough on the work surface into 6 equal pieces.
  3. Create a disk with the dough by pressing the dough with your fingers.
  4. Place desired amount of toppings into the center of the dough (being careful not to overfill and leaving a 1/4 inch edge around the outside).
  5. Fold the dough in half to create a pocket and seal the edges by crimping them together with your fingers.
  6. Place the pizza pocket on a parchment lined baking sheet.
  7. Continue with the remaining dough.
  8. Spray the pizza pockets with cooking spray and top with salt.
  9. Bake the pizza pockets for 15 minutes.
  10. (If eating immediately) Serve with tomato sauce for dipping.
  11. Let cool completely and then place in a ziploc bag to freeze.

Notes

To reheat:

Preheat the oven to 400 degrees F and place desired amount of pizza pockets on a parchment lined baking sheet. Cook for 20-25 minutes or until warmed through.

You can also place the pockets into the microwave for 1-2 minutes.

*Serve with tomato sauce for dipping.

Freezer Storage Tips:

Tip 1: Always let food cool before putting it in the freezer. 

Tip 2: Try to create a barrier so the least amount of air is hitting the food. 

Tip 3: Remove as much air as possible. 

Tip 4: Don’t overcrowd your freezer.
