This tortellini soup is such an easy soup recipe that literally anyone can make! What makes it so easy? It is made with just a few ingredients—3 to be exact—and you may even have most of them on-hand right now!

This is a favorite recipe on my 30 under 30 series. This means that it’s under $30 and under 30 minutes to make. Which means you are saving time and money while getting dinner on the table for your family. 

Ingredients For Tortellini Soup With Three Ingredients:

Spinach — I prefer to use flat leaf baby spinach in this recipe, but feel free to use whatever is available. I always have a couple bags of spinach from Trader Joe’s because I use it so often.

Do you like spinach? I love it! My kids, however, truly love it. So I try to sneak it in smoothies or in soups like this. 

It makes me happy because I know they’re getting so many vitamins and minerals, such as vitamins A, C, and K, magnesium, iron, and manganese.

Tortellini — Homemade tortellini is fairly simple to make, just a bit tedious, especially with 3 little kids in the home, so I frequently default to store bought tortellini. Cheese tortellini is the most popular and common flavor, but I’ve seen others out there, too. Don’t be afraid to try something new!

Pasta Sauce — Are you like me and always have pasta sauce in your pantry? I use it for so many recipes, not just spaghetti!

Try to find a flavorful sauce that doesn’t have too much sugar. You’ll find that the flavor of the sauce is more robust and closer to an authentic homemade Italian sauce.

This one is my favorite from Trader Joe’s. You can also grab a great creamy tomato sauce at Aldi or just shop your pantry for any tomato sauce you have on hand.

Change It Up:

You can change up this recipe by simply changing up the ingredients. Try different flavored pasta sauces to different flavored tortellini.

Add some extra protein by adding browned sausage or shredded rotisserie chicken. No matter what you do this will easily be your family’s favorite Easy Tortellini Soup recipe.

Storage and Freezing:

I love to freeze this soup. I like to freeze the leftovers in these plastic soup containers.  When you are ready to eat just thaw the container in the fridge the night before. Throw the contents into a saucepan over medium heat and bring to a simmer to warm through.

Ingredients

  • 2 Jars Creamy Tomato Pasta Sauce
  • 4 Cups Water
  • 2 Pounds Fresh Mixed Cheese Tortellini
  • 6 Cups Fresh Spinach


Instructions

1. Preheat a stockpot over medium heat. Add pasta sauce and water, then bring to a simmer.

2. Add the tortellini and cook for 5 minutes. Stir in the fresh spinach to wilt.

3. Ladle the soup into serving bowls and serve.
